Ingredients
- ½ cup butter, softened
- ½ tsp vanilla extract
- 1 egg
- ¼ cup sugar
- ½ cup packed brown sugar
- 1 ½ cup all purpose flour
- ¾ tsp baking soda
- ¼ tsp baking powder
- ½ cup old fashioned oats
- ½ cup rice krispies
- ½ cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl, using an electric mixer, cream together the butter, vanilla extract, and egg.
- In a separate bowl, combine sugar, brown sugar, flour, baking soda, baking powder, and oats. Stir until fully combined and then add to the butter mixture.
- Blend together until fully mixed. Fold in the Rice Krispies & white chocolate chips if using.
- Using a cookie scoop, scoop rounded balls of dough onto a silicone or parchment-lined baking sheet.
- Bake for 10-12 minutes. Allow to cool 1 minute on the baking sheet and then transfer to a cooling rack to completely cool.
