Air Fried Coconut Shrimp

This lightened up version of coconut shrimp is crispy, sweet, made entirely in the air fryer, and paired with a creamy pineapple sauce.

– shrimp – flour – egg – unsweetened coconut flakes – panko breadcrumbs – sour cream (or Greek yogurt) – crushed pineapple – sugar

In a mixing bowl, combine the coconut flakes and panko breadcrumbs.

Place the egg and flour in their own separate bowls as well.

Dip the shrimp into the flour, shaking off the excess. Then add it to the egg and shake off the excess.

Finish by dipping it into the panko mix and coating completely. Repeat for all of the shrimp.

Place the shrimp in the air fryer basket and spray lightly with avocado oil. Cook for 5 minutes, flip and cook another 3.

While the shrimp is cooking, add the sauce ingredients to a bowl.

Mix to fully combine and set aside to serve with the shrimp.
