You can add any vegetables that you like to Crockpot Chicken and Stuffing Casserole. Be careful about using vegetables that contain a lot of water (zucchini, squash, etc.) because it will affect the firmness of your stuffing.

You can use raw chicken in a casserole as long as you cook it long enough for the chicken to reach an internal temperature of 165°F when tested with a meat thermometer.

To avoid the stuffing mix sticking to the sides, you can spray the crockpot with nonstick spray.

For crispier stuffing, remove the lid for the last 30 minutes to allow the condensation to escape and the top to crisp.
