– Bone-in pork chops – salt & pepper – Avocado oil – Flour – Italian seasoned breadcrumbs – Egg – Onion – Chicken stock – Cornstarch

A pan-fried pork chop with flavorful gravy on top of mashed potatoes screams comfort food. It's similar in texture to fried chicken. But, guess what? It's low in calories. Even better.

Prepare the ingredients to bread the pork chops - beaten eggs, flour and breadcrumbs in different containers.

Once the pork chop is coated, add it to a hot skillet so that it gets crisps up the pork chop, letting each side cook 3-4 minutes.

Deglaze the bottom of the pan with chicken stock. Let the chicken stock come to a simmer and then add in the cornstarch slurry.

Let the gravy thicken up and stir it until its smooth.
