This Cucumber Tomato Salad is the perfect side dish. It uses up two of the most prolific garden bounty, plus bell peppers, avocado, shallot and lots of fresh herbs.

– Cucumber – Cherry tomatoes – Red bell pepper – Avocado – Shallot – Olive oil – Red wine vinegar – Honey – Dried oregano – Fresh parsley  – Fresh dill – Salt and pepper

If you find it can be hard to use it all up, you should definitely make this salad. It goes with everything. You can eat it for lunch or bring it to a potluck or cookout as a healthy side dish.

I like using a mason jar for this simple but so flavorful vinaigrette to shake it up to mix. You don't need a lot - just coat the veggies lightly.
