green chile chicken enchiladas

These green chile chicken enchiladas are creamy, cheesy, and packed full of chicken. They're easy to make and ready in 30 minutes.

– tortillas – shredded cheese – shredded chicken – green chiles – cream cheese – beans – butter – onion – flour – chicken stock – milk – salt & pepper – enchilada sauce – sour cream

Mix together the filling ingredients and set aside.

Saute the onion in melted butter over medium heat.

Add flour to the mix, whisking, and make a roux.

Slowly add in the stock, milk, and enchilada sauce. Whisk constantly. Bring to a simmer.

Add in the salt, pepper, remaining green chiles, and sour cream. Stir to combine.

Layer a small amount of sauce across the bottom of your baking dish.

Fill each tortilla with 2-3 tablespoons of filling and place seam side down in the baking dish.

Pour the remaining sauce over the top.

Top with cheese and bake for 25 minutes in the oven.
