Air Fryer twice baked potatoes

Crispy on the outside and creamy on the inside, these Air Fryer Twice Baked Potatoes are easy to put together and so much faster than the oven. They’re great as a party appetizer or a side dish for dinner.

– Baking potatoes – Avocado oil – Thick cut bacon – Sour cream – Sharp cheddar cheese – Butter – Milk – Garlic and Onion powder – Coarse salt – Black pepper – Optional toppings; extra bacon, chives, green onions

Cover your clean potatoes in oil and sprinkled with salt, then cook til "fork tender" in the air fryer.

Prepare the bacon while the potatoes are cooking.

Cut the potatoes in half the long way once they've cooled and scoop all but 1/4" of the potato out into a mixing bowl.

Prepare the ingredients that will combine with the soft potato to be the filling of your twice baked potatoes.  No masher necessary!

Add a generous scoop of filling to each hallowed out potato skin. Top with shredded cheese before baking in the air fryer.

Be sure to set out extra toppings to place over the potatoes for a fun appetizer or side dish.
