Poke several holes in your sweet potato with a fork. Place in the microwave for 6 minutes.
*This step is optional for crispy skin* Place your cooked sweet potato in the basket of an air fryer and spray with avocado oil and sprinkle with kosher salt on both sides. Air fry at 400 for 3-4 minutes, just until the skin is crispy.
Remove your sweet potato from the air fryer and cut a slit in the top leaving about an inch on each side.
Pinch from the four corners to open the sweet potato. Fluff the inside and create a little hole for your filling to fit.
Add your cheese and then top it with black beans.
If using, add your red onion, then top with your mashed avocado.
Finish by topping with your sour cream and green onion.
