Crispy baked garlic potato wedges are a healthier way to make french fries. You get a soft inside and a crispy outside. They are made entirely in the oven without any boiling required.
Preheat the oven to 450°F. Line your baking sheet with parchment paper.
Wash and dry the potatoes thoroughly. You won't be peeling them, so be sure to remove all of the dirt.
Cut each potato into even ½" thick wedges. Place them on the prepared baking sheet in one single layer. Make sure the potatoes are not overlapping each other.
Spray the potatoes with avocado oil spray. Rub them around with your hands to be sure they are fully coated, even on the skin sides.
Sprinkle with garlic powder, salt, and pepper. Rub them around with your hands to make sure the seasonings are spread evenly on both sides.
Roast in the oven for 20-25 minutes.
Turn the oven to broil. Broil the potatoes for 2-3 minutes. Keep a close eye on them to prevent burning.
Remove the baking sheet from the oven and sprinkle with additional coarse salt if desired.
Notes
To get the potatoes extra crispy on both sides, you can flip them halfway through cooking.
