A savory, Mexican inspired sweet potato that is stuffed with black beans. The salty, crispy skin is the perfect balance with the cool avocado.

– Sweet potatoes – Black beans – Green onions – Sour cream

Pierce your sweet potato with fork tines and place it in the microwave for 6 minutes.  **Want a crispy exterior? Rub the exterior of the potato with avocado oil and some salt. Place it in the air fryer for 3-4 minutes.

Cut a slit in the top of the potato and fluff the insides up with a fork. Start adding in some delicious toppings!

You can go savory (like this recipe) or go sweet and add cinnamon, sugar, and butter. If you're looking to have sweet potato as a side dish, they pair well with steak.
