How to make Vegetarian Stuffed Sweet Potatoes

- Poke several holes in your sweet potato with a fork. Place in the microwave for 6 minutes.
- *This step is optional for crispy skin* Place your cooked sweet potato in the basket of an air fryer and spray with avocado oil and sprinkle with kosher salt on both sides. Air fry at 400 for 3-4 minutes, just until the skin is crispy.
- Remove your sweet potato from the air fryer and cut a slit in the top leaving about an inch on each side.
- Pinch from the four corners to open the sweet potato. Fluff the inside and create a little hole for your filling to fit.
- Add your cheese and then top it with black beans.
- If using, add your red onion, then top with your mashed avocado.
- Finish by topping with your sour cream and green onion.
tips and tricks
- You don't have to crisp the skin in the air fryer for these vegetarian stuffed sweet potatoes, but I love a crispy-skinned potato. By cooking it in the microwave and then crisping it in the air fryer, it saves time instead of doing it entirely in the oven or air fryer.
- You don't have to mash your avocado, but I find I get more per bite when doing it this way.
- The red onion is optional (because it means two types of onion), but I find that marinated or pickled onions are delicious on these.
You have so many options! You can go savory (like this recipe) or go sweet and add cinnamon, sugar, and butter. If you're looking to have sweet potato as a side dish, they pair well with steak.
You can customize a sweet potato to be a filling dinner. Add some protein and healthy fat and it will make a complete meal.
They are not completely fat free, but very close.

- If they aren't big fans of sour cream, omit it. You can also scoop out the sweet potato and mix it with the sour cream and then add it back in.

Super yummy and simple, my 5 year old was able to help make them with ease. I would say to use a smaller sweet potato because we used giant ones and had to microwave just a little bit longer.
