Add the ground beef to a skillet over medium-high heat. Begin breaking it apart, browning it. Season with salt and pepper.
While the ground beef is cooking, add the refried beans to a separate saucepan over medium heat.
Add ¼ cup of the shredded cheese to the refried beans and mix to combine. Once hot, remove from the heat and set aside.
Once the ground beef has cooked through, add 10 ounces (1 can) of the enchilada sauce. Stir to combine and remove from the heat.
Lay out a tortilla on a flat surface. Spread about ¼ cup of the refried beans down the center of the tortilla.
Top the beans mix with ¼ cup of the ground beef mix.
Roll up the tortilla, tucking in the sides as you roll. Once it has been rolled and sealed, top it with 3 tablespoons of enchilada sauce.
Sprinkle the top of the burrito with 2 tablespoons of shredded cheddar cheese.
Heat the burrito just enough to melt the cheese. You can do this by either placing it in the microwave for about 20 seconds or place them in a baking dish in the oven at 350ºF for about 5 minutes.
