Roll the cookie dough out into a large circle (about the size of a large pizza).
Place the dough on a parchment lined or silicone mat lined baking sheet. Do not place it directly on a cookie sheet or pizza stone. It will stick. If you do not have parchment paper or a silicone mat, be sure to grease your baking sheet very well with nonstick spray.
Bake the cookie dough crust in the oven for about 15-17 minutes, or until the edges are set and just barely begin to brown.
Remove the crust from the oven and allow it to cool completely.
In a medium sized mixing bowl combine the cream cheese, sugar, and vanilla.
Whip the frosting together with an electric hand mixer until it's fully combined and fluffy.
Spread the frosting over the cooled cookie dough.
Top the frosting with your fruit.
Serve the fruit pizza sliced like a standard pizza and enjoy!
