Just because this is a dry rub recipe (vs. sauced) doesn’t mean you’ll miss out on flavor. The combination of paprika, cayenne, and garlic in the cajun seasoning gives you a bold, spicy flavor you love in wings.

What you’ll need for Cajun Chicken Wings
This recipe is so simple, you’ll only need two ingredients:
- wings
- cajun seasoning

For the wings, I like to buy a package that has a combination of wings and drumettes. Sam’s Club sells a large bag of them that’s great.
This type of wing is sometimes referred to as “party wings”. Rather than the full wing being attached, they’re already separated for you into flats and drumettes. It’s what most people are familiar with when it comes to buffalo wings.
While flats and drumettes are my preference, this recipe also works great on full wings. You’ll just need to be sure you cook it a little longer.
How to make Cajun Rub Wings
Cajun chicken wings are super simple to make.
Step 1
Preheat the oven to 425ºF.
Add the wings to a large mixing bowl with the cajun seasoning.
Step 2
Mix and combine the cajun seasoning with the wings making sure that all of the wings are completely coated.
Step 3
Place the wings on a parchment-lined baking sheet in a single layer, leaving a little bit of space between them.
Bake for 35 minutes or until the internal temperature reaches 165°F.
Remove from the oven and serve.
Cajun seasoning
Both homemade cajun seasoning and store-bought work great in this recipe. The key is making sure that you aren’t using one that is too salty. You’ll want to have enough rub on the wings to fully coat them and flavor them without overpowering them with salt.
The key flavors you’re looking for in Cajun seasoning are cayenne pepper, garlic, onion, paprika, and oregano. Most seasoning blends will also have salt and black pepper, but they won’t give it that quintessential cajun taste.
Cooking Methods for this Cajun Wings Recipe
My favorite way to cook cajun wings is using the oven baked method detailed in the recipe card. You end up with perfectly cooked wings that are tender on the inside and crispy on the outside.
Baking cajun wings can be done on a wire rack if you prefer, but I don’t find it necessary.
You can also make them in the air fryer. Air frying will help you have an extra crispy outside and works perfectly on a dry rub wing like Cajun wings.
If you decide to grill the wings, rub the grill grates with cooking oil before adding the wings. This will prevent them from sticking and pulling the skin off of the wings when you flip them.
To grill them, preheat the grill to 375ºF and cook them for 20-25 minutes rotating throughout the cooking process.

Place the wings on the grill and let them cook for about 35 minutes, flipping once.
