My favorite is yukon gold for their sweetness, but russet potatoes work great as well.

Garlic Powder – If you prefer fresh garlic, I’d recommend waiting until the very end to avoid burning. Add oil and garlic to a small bowl and pour over the potatoes in the last 5-10 minutes. Be careful when broiling as it could burn the garlic quickly.
Seasoning – You can get creative with the seasonings. Add your favorite burger seasoning or even Italian seasoning works great.
Potatoes – I like Yukon gold potatoes because the skin has a mild taste. You could substitute russet or sweet potatoes in this recipe.
Oil – I prefer to use avocado oil because it is essentially flavorless and has a high smoke point. You could use any other high smoke point oil.

- Preheat the oven to 450°F. Line your baking sheet with parchment paper.
- Wash and dry the potatoes thoroughly. Since you won’t be peeling them, so be sure to remove all of the dirt.
- Cut each potato into even 1/2″ thick wedges. Place them on the prepared baking sheet in one single layer. Make sure the potatoes are not overlapping each other.
- Spray the potatoes with avocado oil spray. Rub them around with your hands to be sure they are fully coated, even on the skin sides.
- Sprinkle with garlic powder, salt, and pepper. Rub them around with your hands to make sure the seasonings are spread evenly on both sides.
- Roast in the oven for 20-25 minutes.
- Turn the oven to broil. Broil the potatoes for 2-3 minutes. Keep a close eye on them to prevent burning.
- Remove the baking sheet from the oven and sprinkle with additional coarse salt if desired.

To get the potatoes extra crispy on both sides, you can flip the potatoes halfway through.

You’ll want to make sure the potato wedges get crispy again.
