Summer produce is some of the best. There’s nothing like fresh fruits and veggies from the farmer’s market, a CSA box, or your garden. 

With your own garden, you can end up with a lot of fresh produce. It can be hard to use it all up.

This Cucumber Tomato Salad is the perfect side dish. It uses up two of the most prolific garden bounty, plus bell peppers, avocado, shallot and lots of fresh herbs. 

It goes with everything. You can eat it for lunch or bring it to a potluck or cookout as a healthy side dish.

Cucumber Tomato Onion Avocado Salad ingredients

You’ll need a handful of ingredients to make this recipe. Don’t worry if you’re out of one vegetable, it won’t ruin the dish. 

Here’s what to grab at the grocery store (or better yet, the farmers market!) – 

  • English cucumber – Fresh cucumbers will give you that perfect crunch. You could also use Persian cucumber or a peeled and seeded American cucumber. 
  • Cherry tomatoes – Any kind of small juicy tomato works here, like grape tomatoes or champagne tomatoes.  
  • Red bell pepper – Any color of bell pepper works except green. 
  • Avocado – Be sure it’s nice and ripe, but not bruised. Here’s how to tell if an avocado is ripe
  • Finely diced shallot or red onion – Either works well here. You could use a white onion too. 
  • Salt – Kosher or sea salt are my faves. 
  • Pepper – Freshly cracked or already ground both work. 
  • Olive oil – Any light tasting oil like avocado oil is fine. 
  • Red wine vinegar – You could also use white wine vinegar or apple cider vinegar. 
  • Honey – Maple syrup or agave nectar are also good options. 
  • Dried oregano – You can use fresh, too. 
  • Fresh parsley – Spring for the fresh herbs. Trust me!
  • Fresh dill – Fresh will make a huge difference over dried. 

Cucumber Tomato Avocado Salad Recipe substitutions

This salad is so good, partly because it’s super versatile. You can mix things up or leave out any ingredients you don’t like and it won’t ruin the recipe.

Instead of English cucumber, you can use Persian cucumber or standard American cucumber that’s been peeled and seeded. 

If you can’t find cherry tomatoes, any small, sweet tomato like champagne or grape will work. These little tomatoes have the best flavor, but in a pinch you could even use a diced tomato. 

For the red bell pepper, replace it with orange or yellow bell pepper if you like. 

Red wine vinegar is my favorite, but other vinegars like white wine or apple cider will work as well. 

How to make Cucumber Tomato Avocado Salad

Here’s how to put to this Cucumber and Tomato Salad recipe:

  1. Combine the salt, pepper, olive oil, red wine vinegar, honey, and oregano in a bowl or mason jar. Mix until it’s fully combined. I like using a mason jar for this to shake it up to mix.

2. In a large mixing bowl, add the cucumber, tomatoes, bell pepper, avocado, and shallot.

3. Pour the dressing over the veggie mix and gently mix to combine.

4. Top with fresh parsley and dill and gently mix to combine.

Then transfer it to a serving bowl and serve, or refrigerate until later.

Here are some tips and tricks for making this recipe: 

It’s important to gently mix the salad so you don’t burst the tomatoes or squish the avocado. You want them to remain in firm pieces.

Using a mason jar for the dressing works great because you can shake to mix everything up well.

This salad is so good with your favorite summer foods. Think grilled goodies like ranch burgers and smoked chicken thighs.

You may also want to serve some other salads on your buffet table. Salads like a simple fruit salad or potato salad are great. 

This bright and colorful salad is the perfect addition to the menu when your meal doesn’t have a lot of color.

How to store Tomato Cucumber Avocado Salad

You can prepare this easy salad a couple of days ahead of time, if you like. Mix together the salad ingredients, except the avocado, as it will brown. Go ahead and make the dressing, too. Then, just before serving, slice up the avo and add it and the dressing to the salad and mix it up. 

Once the salad is combined, enjoy it within one or two days. The avocado will brown but is still edible. However, the cucumber and tomato won’t be as firm the next day.
