If you’re looking for a super simple, easy, filling salad, this is the one. I make this one quite a bit during the summer. It’s the time when the tomatoes taste amazing, cucumbers are always juicy, the avocados are just ripe, and all the produce just tastes so much better.
I include a couple forms of protein including egg, bacon, and cheese. Feel free to add or omit to whatever fits your tastes. I top mine with my semi-homemade ranch dressing. I’ll post the recipe for that soon! Aside from ranch, any sort of light summery dressing would work great on this. If you use the maple turkey bacon like I do, it adds a ton of flavor.

Ingredients
- 1 mini head Romaine chopped
- 1-2 pickling cucumbers seedless, sliced
- 6 grape tomatoes halved
- 1/2 avocado cubed
- 1 hard boiled egg chopped and cooled
- 2 slices turkey bacon cooked, chopped and cooled (I use maple flavored)
- 1/4 cup sharp cheddar cheese grated

- Combine all of the ingredients, top with your favorite dressing, and enjoy!
