How to Make Creamy Chicken Alfredo

Detailed instructions and measurements are listed in the recipe card at the bottom of this page.

  • In a large heavy-bottomed skillet, add oil and turn on high heat.
  • Once the oil is hot, add chicken and sprinkle with salt and pepper. Sear the chicken quickly. You want the chicken to be brown on the outside, but it does not need to be cooked through.
  • Once the chicken is seared, turn the heat down to low. Add in the garlic and saute for about 30 seconds to 1 minute. Just until the garlic becomes fragrant.
  • Turn the heat back up to high and add the pasta and chicken broth. Bring it to a boil.
  • Once it’s up to a boil, turn it down to a simmer and let it simmer until the pasta is cooked to al dente and more than half the liquid has been absorbed.
  • Add in the cream cheese and stir until it’s mixed through and melted. Then add in the parmesan cheese, mixing it through until melted.
  • Add in your fresh oregano and fresh basil. Stir until combined and serve with your favorite garlic bread.

One Pot Alfredo Tips and Tricks

  • I recommend using fresh herbs and fresh garlic. It adds a lot of flavor and stands up to the creamy, cheesy sauce.
  • You can use whatever pasta you have on hand.
  • Be sure the exterior of your chicken breast is dry (without water), it will help it sear properly.
  • I recommend using freshly grated parmesan. It melts and tastes better than the pre-shredded kind.

Storing this Chicken Alfredo Recipe with Cream Cheese

Chicken Alfredo with Cream Cheese should be cooled completely before storing. Once it has cooled, place it in an airtight container in the refrigerator for up to 3 days.

Chicken alfredo can dry out when left over. I recommend adding a little chicken broth or heavy cream when reheating the leftovers.

For the best results when reheating, add them to a skillet and heat over low heat adding the chicken broth and heavy cream as needed for your desired consistency. You should only need just a splash.

FAQ for Chicken Alfredo with Cream Cheese

Do I have to use fettuccini for chicken alfredo?

Not at all! You can use whatever pasta you prefer or what you happen to have on hand.

What spices go in alfredo?

I like to keep it simple with salt, pepper, oregano, and basil.

Is heavy cream or milk better for Alfredo?

For the best flavor and to get that delicious, thick, creamy sauce, its best to use heavy cream for alfredo.

How do you get Alfredo to stay creamy?

Alfredo can separate and dry out as it cools but will stay creamy once you make it. If you find that it begins to dry out or separate, a splash of cream or broth can help bring it back together.

How do you make Alfredo sauce creamier and thicker?

The key to a creamy and thick alfredo sauce is to use either heavy cream or cream cheese. This particular recipe uses cream cheese, but heavy cream combined with parmesan will give you a creamy, thick sauce.
