How To Cook Roasted Garlic Parmesan Broccoli and Cauliflower

  1. Preheat the oven to 425°F.
  2. Add broccoli and cauliflower florets to a sheet pan in a single layer. Be sure to break apart any large pieces so that it all cooks evenly.

  4. Season the broccoli and cauliflower with salt and pepper.
  5. Roast in the oven for 25 minutes.
  6. Remove from the oven and add the minced garlic. Mix to combine.
  7. Add half of the parmesan and mix to combine.
  8. Put it back in the oven and roast for another 5 minutes.
  9. Remove from the oven and top with the remaining parmesan.

  • Don’t add the garlic at the beginning with the salt and pepper. It will burn and become bitter.
  • Save time by purchasing broccoli and cauliflower florets that are already cut.
Can I roast frozen broccoli?

I do not recommend it. Frozen broccoli can get soggy quickly.

Can I add lemon juice?

Yes. I would recommend adding the lemon juice when you add the garlic and half of the parmesan before continuing to roast.

Can I use pre-shredded parmesan?

Fresh grated parmesan works best. Pre-shredded parmesan does not melt well.

Can I roast broccoli with butter instead of oil spray?

Yes, you’ll need to melt the butter and make sure the broccoli is fully coated.

Does parmesan cheese taste good on broccoli?

Parmesan cheese is excellent with broccoli. It adds a savory, salty flavor.

How do you keep cauliflower from getting soggy?

By roasting completely in the oven, cauliflower will get a crispy roasted texture and you’ll avoid it becoming soggy.
