I love pasta salad. It truly is one of my favorite

I love pasta salad. It truly is one of my favorite things to eat. I really like putting a Greek twist on it by using all my favorite Greek salad ingredients and then using tortellini for the pasta and tzatziki as the dressing. The points for mine varies a lot when I make this depending on if I make my own tzatziki or get it from the store. I use fat free feta and try to find a point friendly tortellini. The last time I made it, I managed to get it down to 5 points per serving! I've added a link in my bio for the exact way I make mine (@sweetlysplendid)

It's Fall and that means all things apple and pumpkin! We're kicking off this Fall season with some Apple Cinnamon Monkey Bread. Monkey bread is always delicious, but with the addition of apples and warm spices, it takes it to the next level. I make my monkey bread a little different than most because I hate when it gets so sticky and chewy that you can't actually eat it. I made real ramen for the first time tonight. I don't know why I waited so long! It was delicious and super duper easy. It felt like a super indulgent meal and it really wasn't heavy on points (9pts) or calories (430). Here's the thing (as I said in my stories)... do as I say, not as I do. I preach all the time to you guys about making your boiled eggs in the Instant Pot because they are fool-proof. Then here I go thinking, “I'll just do it on the stove because it's faster” and I ended up not only over cooking it, but peeling it like a 3 year old 😂 oh well! It was still delicious! This was my first time ever even trying ramen outside of a package but I thought it was delicious! Here’s how I made it: ⁣

Today's breakfast sandwich was a double decker! It's the same breakfast sandwich from before, just with scrambled eggs and of course two turkey sausage patties. Here are the deets:⁣

• 1 @oroweatbread sourdough English muffin(4)⁣
• a couple sprays of @icbinotbutter spray (0) ⁣
• 1 egg, scrambled & seasoned with black pepper and @lawrysseasoning seasoned salt (2)⁣
• 2 @jimmydean turkey sausage patties (3)⁣

Made the same as before (see previous post), just with a scrambled egg this time. I switch it up depending on the day. Total comes out to 9💚 / 270 calories. It could be made way lower in points if you went with a bagel thin or a light English muffin.⁣

Green Chile Chicken Enchiladas - I love them so much that I didn't stop eating them when I lost 50lbs and still eat them today! The one thing I hate about chicken enchiladas is that they can often seem dry. That's not the case with these at all. With the added cheese to the filling, it keeps them delicious and anything but dry. ⁣
